How to Make Kewpie Mayonnaise.
Kewpie mayo is in my opinion the best mayonnaise in the world. It’s rich in natural MSG and umami taste because of the addition of Dashi stock in the recipe.
Canola Oil 250ml (you can substitute for grape seed oil)
Dashi Stock 75 ml
Egg Yolks x2
Rice Vinegar 2 tbsp
Lemon Juice 2 tbsp (or Yuzu juice)
Sea Salt 1 tsp
Mustard 1/2 tsp (Japanese mustard preferred)
Sugar 1 tbsp
